PET NAT MALAGOUSIA (Limited Production)
 
The Petillant-Naturel or Methode Ancestrale method comes from France and it is the oldest method for the production of sparkling wine. The wines produced by this method are called Petillant Naturel or "Pet-Nat". The resulting wine is cloudy and unfiltered and it’s bottled with a "crown" cap.

Vinification: Manual harvesting in 20 Kg picking baskets. Mechanical destemming, skin-contact at 10°C for 24 hours, light pressure, static debourbage, alcoholic fermentation in stainless steel tanks at 16°C. The wine is bottled before the main fermentation is completed, without the addition of secondary yeasts or sugars. The fermentation continues in the bottle creating carbon dioxide (CO2) and forms tiny natural bubbles. The disgorging process is done manually. The presence of a small amount of sediment is normal.
 
Organoleptic Analysis: Slightly cloudy, light yellow with greenish highlights. Medium acidity with aromas of tropical fruits and notes of herbs.
 
Harmony of flavors: Enjoy it as an aperitif or accompany it with seafood, fresh salads and fruit tarts. Served at 8-10 ° C.
 
Alcohol by volume: 12%
